What you're describing are probably comboboxes

Plain Bootstrap doesn't have any ready-made filterable/searchable
combobox/autocomplete type functionality, so if they're using Bootstrap,
it's likely only providing the look and feel and the actual
functionality is done through a Bootstrap extension/plugin or different
underlying framework.
