Does anyone have any good resources or ideas on how a totally blind
person can present / train others on the guidelines for color (use of)
and color contrast issues? Also, does anyone know of any good and bad
examples of for the color guidelines of WCAG? Thanks for all of your
help.

First Id say that if the person was born without any light perception, he
or she needs a concept of what colors and contrasts are. Thats not too
difficult, if you can explain acoustic analogies to the person.
A violin sounds different to a singer or a piano, but rather similar to a
cello. This could be compared to colors and color contrasts.
If a loud singer is accompanied by a silent piano sound, you will understand
the sung text, but not the other way round. This could be compared to the
brightness (luminance) contrast.
Now the blind person can talk about visual contrast just like about acoustic
phenomena. He or she just needs to learn minimum values of contrast in the
guidelines, just like anyone has to, since requested contrasts cant be seen
intuitively anyway.
Sounds easy and convincing?

Questions I have for you:
1. do you understand when to apply 1.4.3 on which components?
2. Do you know how to test for 1.4.3 colour contrast?
3. Do you know the other related SC such as 1.4.11 Non-Text Contrast?
If you understand the above, then I feel you have enough information to educate the group. Understanding when or not to use specific colour combinations for branding or visual effects I think isn't an area of ease for someone who is blind. What are good colour combinations is something will be learnt in experience if you ask people or review a lot of CSS. Again, I see this as being a challenge for a blind person compared to someone who can see. Thus why I pair with someone who can see to touch upon the more challenging areas.
Note: I am a blind person myself and sharing my experience.
The same concepts apply to the 2nd question.
