Does anyone know of any books, classes, or consulting firms that specialize
in accessible kiosk design for educational institutions?

> Yes, and here's a bit of context... JAWS for Kiosk has been around for a
while on Windows, and recently added support for Android. A "kiosk" can be
any interactive closed system, such as a point-of-sale device, a museum
tour guide, or any other fixed-location or portable self-service device.
As a screen reader on an individual's own personal device however, JAWS is
still only on Windows, not Android.
