As well as the peepo site, have you seen http://www.widgit.com
They've got a range of software for generating symbols based resources
(computer or paper based) - and it's also possible to import different
graphics sets into the software if you've got someone who's learnt a
different set.
They've also got some interesting examples of using symbols on a
"regular" web page at http://www.widgit-online.com/index.htm

I've used them a lot with students with disabilities - though don't
have any photos particularly of children/young people using them.
