I keep hearing about AJAX. If this is used will the site be accessible?

Sure, if the developers go the extra mile to make the AJAX
accessible.

Elements need to be accessible to the keyboard and the
screen reader; they need to have roles assigned in non-native
elements artificially created with span and div; there needs to
be WAI-ARIA as appropriate; especially on dynamic elements;
cognitive accessibility needs to be taken into account when the
webpage is made to act in a nonstandard fashion which may be
unfamiliar to the user; etc.
