I would recommend Camtasia. The software developer is techsmith.com
In my opinion, the easiest to use, and it outputs to flash, avi, quicktime and real player, and you can also do podcasting, with upload different ways (and direct to itunes).
It has a nice set of tools and can even be made interactive if you want to do surveys or quizzes.
