GAAD - fine motor and gross motor experience

Hello!
My team is hosting a Global Accessibility Awareness Day (GAAD) open house for team members on May 21. We will have a few tables focused on specific issues like low vision, video, AT, as well as posters, a series of demos, all with hands-on things to try.
My table will be focused on motor issues. Instead of an in-depth workshop, it will be more like a mini, drop-in workshop.
I'm looking for reference material re fine motor and gross motor experience. I have Patrick Dunphy's presentation and some notes from CSUN.
I understand fine motor and gross motor in theory, I want to be sure I am teaching/guiding them through the issues correctly. When I ask participants try out the "empathy kit" (hair ties and socks, or sponge, tape and pencils,) I want to be clear on the limitations, activities, and needs for each.
Any material you can point me to would be most appreciated.
