virtual keyboard layout for vending machine

hello all,
we are helping to design a "simple mode" for a ticket vending machine with
a 14'' touch screen:
* easy to understand + step by step ticket selection process
* large text
* high contrast
our target groups include people with low vision as well as people with low
literacy / low digital literacy, people with cognitive disabilities ...
some interfaces need a virtual keyboard to enter origin and destination for
a trip. in the standard mode a normal QWERTY / QWERTZ layout will be
provided.
for the simple mode we consider using a different virtual keyboard layout,
eg an A-Z ordered layout.
does anyone of you has experience, links or thoughts that might help to
decide?
