If it helps, here's some information from Tarleton State University on accessible Email Documents, http://www.tarleton.edu/accessibility/standards/email.html. I send a lot of broadcast information emails to the faculty/staff/student distribution lists on behalf of West Texas A&M University. I try to ensure the broadcast emails have at least an accessible alternate text version, for example when the broadcast email requested is just an image of text embedded in the email. I prefer to convert tables to text if they are layout tables, but that often confounds the purpose of the table - to arrange images and text so that they are pleasing to the eye and powerful in the message.
