WCAG SC 1.4.4 Resize Text on mobile devices

This issue arose on the IAAP forum today, but I am raising it here too because there's a substantially greater depth of expertise and insight.
When testing SC 1.4.4 on a mobile device, pinch-to-zoom is a sufficient technique. Once you have established that pinch-to-zoom works, there is no reason to test what happens if you change the font size in the device settings. But what if you do, and you find it results in loss of content or functionality?
Arguably, this should not be a non-conformance because the user can set the font size back to normal and use pinch-to-zoom. But that's a bad user experience given that some people will have increased the font size prior to visiting the website and may not even realise that it's the increased size that is causing the fault.
