I've never used it but there's a ux testing app that will record all activity on the phone, including screen and sound. Might do the job.

Yes, you might be able to record the VoiceOver speech output with a voice recorder, but you can't do a screen recording that captures VO, the screen, and your voice. Apple does not allow screen recording apps into their "walled garden" app store. If you're Jailbroken you can do full screen recordings using a Cydia app called RecordMyScreen. The app works well to do video recordings and upload to YouTube without needing a desktop computer!

Anyone do screen recordings on Android with TalkBack?
