I'm still on the hunt for a viable solution to create quick PDF files on
the Mac that are at least marginally accessible.
Has anyone used the Nuance PDF Converter for MAC OSX?

I used to use the Windows version, and it was a really easy way to make a
PDF from any product. But that was many versions ago.
It doesn't have to make perfectly accessible PDF files, but it would be
helpful to have a way to take a simple document and end up with a tagged
file.
(I work on some teams where we've got format incompatibilities in the tools
people use, and PDF files are helpful for exchanging drafts. These are
quick, disposable documents, not final files for publication.)
