Whatever alt text you add to an image in Outlook, like a logo in a signature, will be read by NVDA (at least), when you open that email in Gmail on Windows.

For my work signature in Gmail, I first created it in Outlook, sent that email to my Gmail account, copied my Outlook email signature with the image, and pasted it into my new signature template in Gmail. When users have HTML enabled on their devices, my gmail signature then displays the image and AT reads the alt text.
