I should have also mentioned the resources available from the State of Minnesota: http://www.mn.gov/mnit/programs/accessibility/electronic-documents.jsp
They are working on getting all state employees trained in creating accessible documents, and sharing all the materials they are creating for that. It even includes a PDF for printing nifty quick checklist cards for Word, Excel, PowerPoint, and PDF
