From our experience, we consider an electronic signature as valid as long as we log that the user is authenticated and have some element that requires action. So for instance, we'll have the user authenticate and then we have a button that the user needs to click to approve a record. Another example could be authentication with a textbox that requests the user to enter his or her name.

You can add an authentication component to qualtrics so this could be a viable solution for you.

We use Qualtrics and have a survey which requires a signature block. The signature block is a canvas element and requires visual interaction.

What are some alternatives that others have used in place of this inaccessible option?
