When you get your AirPods just open the case next to your phone and you should get a dialog saying that they are now synced. There is a button on the back of the case that you can use to sync them with non-apple bluetooth devices. If you try to use them with El Capitan you will get error messages.

I find I have to connect/disconnect them manually from the Macintosh via the bluetooth menu in the menu extras.

Also, in the booth tooth system settings you can redefine wwhat the double tap does on either or both AirPods. by default it brings up Siri.
