Hello Sean,
I personally don't know of any e-mail HTML testing tool regarding accessibility. What I know as a screenreader user is that modern screenreaders should be able to work with HTML tables in e-mails as well. All in all I would say that most of the things you might know from web accessibility are true for e-mails as well. What I'm seeing in real-life is that performance can get poor in e-mails (especially when using NVDA together with Outlook) which I regard more of a screenreader issue than an HTML accessibility issue.
So I would say: Create an accessible HTML/CSS as known from web and avoid unnecessary graphics in e-mails.

I am seeking for a good resource on e-mail HTML accessibility. Type of information I am seeking is:

* What in CSs is not supported?
* Is there any other way of laying out information without using tables?
* What limitation is there related to E-Mail HTML for the main clients like Outlook, windows Mail, Apple Mail on Mac and iPhone, Android default email client. Anything out side of this scope I am not interested in. As we have to scope our testing boundary on these clients.
* How to validate accessibility for E-Mails - such as tools to auto test.

We are using the WCAG 2.1 standards. Some of these SC's don't apply. Any information on this is more than welcome as we want to ensure our e-mails are accessible as possible.
