WebAIM has a video-based, independent-study online course––Accessible Documents: Word, PowerPoint, & Acrobat<https://webaim.org/training/docs/>––that I believe will meet your needs. As the name suggests, this course focuses on teaching the principles of and processes for optimizing accessibility in source documents created in Word & PowerPoint (with a bonus module covering Excel). It also covers using Adobe Acrobat Pro DC to optimize PDFs that have been created from these well-structured source documents––including optimizing tables.

I'm looking for recommendations of courses that teach how to make PDF's
accessible. Preferably the course would have examples and be inclusive of
creating tables and multiple column text.
