Have a look at my own course to see if it fits your needs:

Web Accessibility Training Course - WCAG 2.1 Compliance

It's not a training course on using a screen reader - but it contains a lot of the information relating to accessibility for screen reader users - and it includes interviews with screen reader users. It's mainly aimed at beginners.
