Hello all,
I am going to be creating my own website so I can keep up with my coding
skills. Would it be better to do it in something like XHTML 1.0
transitional as to support older browsers or HTML 5? I am thinking of
doing something to show examples of accessible forms and the like.

I'd go html 5
There are several JavaScript libraries out there that will let older browsers "See" the new elements.
