What's new in this field in the last couple years? I know of a few,
but I'm interested if anything's come out lately.

Are you familiar with the Accessible Content Magazine? It is a print
quarterly, and it is now a free subscription.

There's the WebAIM Guide to Web Accessibility -

It's a very comprehensive (over 1000 printer pages) set of resources.
