Please tell me how to work with tables in PDF documents using voice over
on mac os.

Are there any guides for it.

Hi,
The best way to understand this is to go through the tutorial that comes with VoiceOver. It is extremely good. It really was very helpful to me when I was getting started. I recommend it to anyone.
