Another option to "find" your disappearing text without going into the
content panel would be to arrange it in the Edit panel. Simply select the
box around the missing text > right-click > Arrange > Bring to Front. You
should then be able to return to the accessibility panel and select it to
tag as needed. I will usually instruct this way first since I always
strongly discourage going into the content panel.

Caution when using Acrobat's Edit panel.
It's been a long-known bug that when you edit any of the content with that panel's and the PDF has already been tagged, there's a sizable risk that the document's structure will be trashed somewhere in the PDF. Items like lists become mis-tagged as one <L> without any <LI> tags. Tags for tables become scrambled. 2 text <P> tags are merged into one. Footnote tags are lost. Crazy stuff like that.
And it doesn't usually happen at the point where you're editing. You could make the edit on page 1 and the tags on page 100 will happen corrupted.
This has been known by Adobe for a long time. Very long time.

The other problem I've found with the Edit PDF tool is that it has no boundaries and as long as you keep typing, it will keep adding text, even if the text goes off the page and into outer space.
