Does anyone have direct experience with the Adobe Experience Manager
product? I wish to understand the level of compliance this product has to
WCAG 2.1 and what challenges people have had with the product in the area of
accessibility? Is the product itself accessible? That is, can a screen
reader user use the product to create a web site?

You can start by going through Adobe's own assessments / accessibility
conformance reports (based on VPAT)

I've seen a super accessible set of websites based around common
components being built with AEM.
I can't speak to the accessibility of the environment itself but I've
seen AEM being the basis of a very accessible high traffic web
content.
