When I do "Jaws Key + H" while in Google Docs, the Hot Key Help only lists
key commands to use with Chrome generally, but not specifically for the
docs.google.com site that I'm on.

Google Docs allows you to press "Control + /" to see a list of keyboard
shortcuts belonging to their interface.

It's also a good idea to enable screen reader support when you have a
Google Doc open.
Tools > Accessibility Settings > Turn on screen reader support
