In my version of Acrobat Pro DC (2023.003.20269), the update options are
found in the following menu:
Edit > Preferences > Updater > checkbox: Automatically install updates

When navigating by mouse, you have to scroll the "Categories" to see the
"Updater" option in the Preferences sidebar list.

You can also reach this menu via keyboard shortcuts:
CTRL+K
followed by pressing u twice (there are two categories that begin with
"u" and "Updater" is the 2nd)
then tab to the checkbox
space should clear the checkbox
tab again to the OK button
enter to press OK
