I typically discourage disabling form controls, let the users make the
mistakes and use informative error messages to assist them in correcting
those mistakes.
I think for disabled dates it's a bit different.
Letting users navigate to unavailable dates can require a lot of extra
effort (e.g. with keyboard)

I think having text on the page that clearly states the available date
range + disabling dates outside of that range may be the most accessible
implementation.

Of course that's just my opinion and I don't have any data to back it up. ;)
